The Institute of Food Technologists Annual Meeting and Food Expo (IFT16) at McCormick Place in Chicago just ended, and Firebird was there to stay on top of growing trends and industry news.
With so much energy and innovation happening in one place, we had a hard time fitting our enthusiasm into a few choice highlights.
Fingers on the pulse
Exhibitors at IFT16 were truly celebrating the Year of the Pulse. More and more, food innovators and manufacturers are using pulses in their flours and other formulations across the product spectrum. Igor Playner, vice president of innovation and strategy at Ingredion, a leading global ingredients company, offered high praise to pulses, saying, “Ingredion is currently using them to create high-protein pastas and snacks. It goes into other things like batters and breadings, doughs and now even into dressings. It is a multi-use ingredient that more and more people are experimenting with.”
At Firebird, pulses have been a regular part of our family for a while. “It’s exciting to see people learn better ways to use lentils, peas and garbanzos,” says Firebird’s Chris Krenzel. “We love exploring possibilities with our customers.”
Labels clean up
At IFT16, a number of ingredient manufacturers like Biospringer, Carolina Innovative Food Ingredients, Corbion, Parker Products, and PLT Health Solutions showcased flavor enhancers and sweeteners developed specifically to help meet the growing “clean-label” demand.
Firebird is certified gluten-free to 10 ppm and we don’t process any of the big 8 allergens, so clean labeling is already in our wheelhouse, so to speak. Our ingredients are wholesome and simple. That’s why we’re excited about consumer demand for clean labels and ingredients that are easy to understand.
